Product description

Organic cashew flour is a partially de-oiled, finely milled plant flour with a mildly sweet, characteristic sensory profile. The white-beige flour is suitable as a plant-based raw material for food development.

The organic cashew kernels are first partially de-oiled by CO2 extraction. The resulting crude protein is then sterilised using a special BactoSafe process and finely milled using kryonert® technology. Milling takes place in the absence of oxygen and in a temperature-controlled process. The combination of CO2 partial de-oiling, BactoSafe sterilisation and gentle kryonert® fine milling enables controlled, gentle production of the cashew flour and helps preserve valuable constituents. The entire production takes place in Germany.

Thanks to its mildly sweet sensory profile, organic cashew flour can be used in a wide range of savoury and sweet food concepts. It is suitable for vegan diets and is free from gluten, lactose and soya. Possible applications include plant-based cheese alternatives as well as desserts, smoothies and other vegan product concepts.

Manufacturing process

Fine milling

Fine milling

Natural

Fine milling of the press cake in the absence of oxygen at very low temperatures (kryonert®) – for particularly gentle processing.

In this processing step, the press cake is finely milled in the absence of oxygen at very low temperatures using a gentle process (kryonert®). This process and the special surface structure the product acquires prevent any reaction with potential reactants such as atmospheric oxygen. As a result, the protein does not turn rancid despite its residual fat content.

Microbial reduction

Microbial reduction

Additional processes

Steam treatment (Bactosafe) in an airtight pressure chamber – for safe products and a longer storage life.

For microbial reduction (Bactosafe), the raw protein is treated in a pressure chamber that can be hermetically sealed. Depending on the product, residence times during steam treatment range from 39 seconds to 15 minutes, at temperatures of up to 140 °C.

The right combination of temperature, steam and time achieves the desired microbial reduction. This ensures product safety and at the same time extends storage life.

Further processed

Gentle de-oiling to approx. 2% fat content with biogenic CO₂ – non-toxic, with GRAS status and usable without further post-processing.

CO₂ extraction reduces the fat content of the product to approx. 2%. The CO₂ used is biogenic and is generated during the production of bioethanol fuel from plant material. The amount used corresponds to the amount of CO₂ that the original plant removed from the atmosphere during its growth; only this amount is released again in the extraction process.

The CO₂ used is non-toxic, has GRAS status (Generally Recognized As Safe) and can be used in food without restriction. The extracted products can be used without further post-processing.

Frequently Asked Questions about the product

Which applications do your food raw materials cover?
Our organic proteins and functional raw materials are suitable for baked goods, plant-based meat and dairy alternatives, spreads, protein bars or extrusion. They are sustainable, certified organic and offer high functionality and nutrient density.
Can I buy raw materials as a consumer?
No, our range is aimed at companies that use raw materials for further processing, filling or product development. Direct purchases by consumers are not possible.
Is AOT a trading company or a manufacturer?
AOT is both. We buy raw materials in large quantities, fill them to customer requirements and produce many products together with our long-standing partners. On site, we process raw materials – filtering, winterising, macerating and much more.
How does AOT ensure quality, traceability and sustainability?
Every batch is thoroughly tested: chemical analyses, microbiological tests and stability checks ensure consistently high quality. All raw materials are traceable by batch. Our processes comply with IFS Food and ISO 22000:2018 standards. Sustainability and ethical conduct are central to what we do: we work according to our Code of Conduct, use carbon-neutral logistics and recyclable packaging, and give preference to sustainable raw material sources.
