AOT Binder Performance organic

AOT Binder Performance is an organic plant-based binder for food development. The versatile formulation can be dosed flexibly depending on the desired product structure and application and integrated into a wide range of food concepts.

The product supports binding and texture in various applications and is particularly suitable for producing plant-based and mixed formulations. Spices, onions, mustard and other ingredients can easily be incorporated into the recipe.

AOT Binder Performance is characterised by pronounced water and fat binding and good emulsifying capacity. When heated, the binder gels and helps firm up the product structure. It can therefore be used as a binder, texturiser and stabiliser in a wide range of food recipes.

Typical applications include meatballs, Königsberger Klopse, nuggets, ćevapčići, burger patties and other products with binding and texture requirements. The product is suitable both for industrial processing and for dry mixes for later use in the kitchen.
